Ingredients Directions
  1. Coat a large skillet with the cooking spray, and cook the peppers and onion 5 minutes. Remove from the pan; keep warm.
  2. Sprinkle 2 tablespoons cheese over each of 3 tortillas. Top each evenly with roast beef and peppers. Sprinkle the remaining cheese evenly over the top of the mixture and top each with another tortilla.
  3. In another pan, cook each quesadilla in the skillet over medium-high heat, 1 minute per side, or until the cheese is melted. Cut into 12 pieces.
