16 oz  firm tofu
1 tbsp  olive oil
0 1/2 tsp  dijon mustard
2 each  medium garlic cloves
4 tbsp  low sodium soy sauce
1 tsp  sweetener (sugar substitute)
1 cup  cold water
1 pinch  salt and pepper
  1. Cut tofu into small cubes and brown in oil, using a non-stick skillet.
  2. Combine remaining ingredients and pour over tofu.
  3. Simmer until all the liquid is absorbed. Correct seasoning to taste.
