4 piece  Cornbread, squares, 122704, FS
1 lb  Crab, blue, raw
0.3333 cup  chopped parsley
3 each  scallions
1 each  medium bell peppers
2 tbsp  fresh lemon juice
1 tbsp  fat free milk
0 1/4 oz  Sauce, hot, packet
0.125 tsp  salt
0 1/4 tsp  black pepper
2 each  egg whites
4 tbsp  light mayonnaise
3 tbsp  canola oil
1 each  parsley sprigs
1 each  fresh lemons
1 tsp  old bay seasoning
Directions
  1. Place the dried corn bread in a food processor; process until crumbed. Set aside.
  2. Combine 11/2 cups crumbs, the crab, parsley, scallions, red pepper, lemon juice, milk, hot sauce, salt, pepper, egg whites, and mayonnaise. Mix well and set aside.
  3. Place the remaining corn bread crumbs in a flat pan.
  4. Divide the crabmeat mixture into 12 portions and shape into patties. Squeeze gently to remove excess moisture. Roll the patties in the corn bread crumbs.
  5. Heat 11/2 tablespoons oil in a large nonstick skillet over medium-high heat. Add 6 patties and cook for 4 minutes, or until golden brown. Turn patties and cook for another 4 minutes. Transfer to a plate. Add the remaining oil to the skillet, and cook the rest of the patties.
  6. Combine the mayonnaise and Old Bay seasoning to create a sauce. Garnish with parsley sprigs and lemon wedges.
