1 tbsp  olive oil
1 each  large onion
2 lb  fresh plum tomatoes
2 tbsp  fresh basil
2 cup  low sodium chicken broth
1 cup  fresh chopped spinach
0 1/2 tsp  salt
0 1/4 tsp  black pepper
2 tbsp  grated Parmesan cheese
  1. In large saucepan, heat oil over medium high. Add onion and sauté until softened, about 4 minutes.
  2. Stir in tomatoes and basil. Cook until tomatoes are tender, about 5 minutes.
  3. Transfer mixture to blender or food processor. Purée until smooth, return to pot.
  4. Add broth, bring to boil.
  5. Add spinach, cook until wilted, about 1 minute.
  6. Season with salt and pepper. Ladle into serving bowls and garnish with Parmesan cheese.
