Ingredients

1 tbsp  olive oil
1 each  large onion
2 lb  fresh plum tomatoes
2 tbsp  fresh basil
2 cup  low sodium chicken broth
1 cup  fresh chopped spinach
0 1/2 tsp  salt
0 1/4 tsp  black pepper
2 tbsp  grated Parmesan cheese
Directions
  1. Peel and chop onions. Quarter tomatoes. Chop basil.
  2. In large stockpot, heat oil over medium high. Add onion and sauté until softened, about 4 minutes.
  3. Stir in tomatoes and basil. Reduce heat to medium-low. Cook until tomatoes are tender, about 10 minutes.
  4. Transfer mixture to blender or food processor. Purée until smooth, return to pot.
  5. Add broth, bring to boil.
  6. Reduce heat. Add salt and pepper. Simmer 10 minutes.
  7. Add spinach, cook until wilted, about 1 minute.
  8. Ladle into serving bowls and garnish with Parmesan cheese.
