4 tsp  olive oil
2 oz  medium shallots
6 oz  fresh baby spinach
0 1/4 cup  Cheese, ricotta, whole milk
3 tbsp  salsa
3 each  eggs
3 each  egg whites
1 tbsp  cold water
0 1/4 tsp  salt
0 1/4 tsp  black pepper
2 tbsp  grated Parmesan cheese
Directions
  1. In large skillet, heat 2 teaspoons olive oil over medium.
  2. Add shallot, sauté until tender; about 3 minutes. Add spinach, sauté 2 additional minutes or until spinach is wilted.
  3. Spoon mixture into bowl and gently stir in ricotta and 3 tablespoons salsa.
  4. In small bowl, whisk eggs, egg whites, water, salt, and pepper.
  5. Return skillet to stovetop. Heat 2 teaspoons olive oil over medium.
  6. Pour egg mixture into hot skillet and cook 10 seconds or until edges are set.
  7. Using spatula, pull in cooked edges, allowing uncooked eggs to run underneath. Cook egg 5 minutes, or until only a small amount of uncooked egg remains in the middle.
  8. Spoon spinach mixture on top of egg and sprinkle with parmesan cheese. Cook 20 seconds.
  9. Remove from heat and fold omelet in half. Move to serving plate and top with dollop of salsa.
