1 tbsp  maple syrup
1 tsp  red wine vinegar
0 1/4 tsp  dijon mustard
1 tbsp  extra virgin olive oil
1 tbsp  fresh chives
0 1/4 tsp  salt
0 1/4 tsp  black pepper
2 each  Bacon, cured, center cut
1 each  medium apples
0 1/4 cup  red onion, sliced
6 oz  fresh baby spinach
  1. Whisk together maple syrup, vinegar, and mustard. Slowly whisk in oil.
  2. Whisk in chives, salt, pepper, and bacon. Mix apple, onion, and spinach.
  3. Drizzle dressing overtop and gently toss.
