Ingredients

1 cup  extra virgin olive oil
0 1/2 tsp  hot red pepper flakes
4 each  medium garlic cloves
2 each  bay leaves
1 tsp  fresh thyme
Directions
  1. In small pot, over medium heat combine oil, red pepper, garlic, bay leaves, and thyme. Simmer until temperature reaches 200°F.
  2. Reduce heat to low and cook 20 minutes, making sure temperature does not exceed 220°F.
  3. Remove from heat and cool to room temperature. Strain through a fine chinois set over a bowl. Discard remaining solids.
  4. Store oil in airtight container, chilled, or use immediately.
