0 1/2 cup  fresh cilantro
0 1/4 cup  fresh mint
2 tsp  ground cumin
2 tsp  fresh lime juice
2 tsp  vegetable oil
0 1/2 tsp  ground red pepper (cayenne)
0 1/4 tsp  salt
3 each  medium garlic cloves
4 each  boneless skinless chicken breasts
1 each  cooking spray
  1. Using a food processor or blender, puree cilantro, mint, cumin, lime juice, oil, red pepper, salt, and garlic until coarsely chopped.
  2. Massage marinade onto chicken and put in a resealable plastic bag. Seal and let marinate in refrigerator for at least 15 minutes.
  3. Preheat grill or broiler.
  4. Take chicken out of bag and dispose of marinade. Arrange chicken on a cooking spray coated grill rack. Cook 6 minutes per side or until fully cooked.
