1 lb  whole leg of lamb
0 1/2 cup  olive oil
2 tbsp  shallots, chopped
1 tbsp  minced garlic
1 1/2 tsp  ground thyme
0 1/2 tsp  fresh lemon peel
1 tbsp  fresh lemon juice
2 tsp  dijon mustard
0 1/2 tsp  ground cumin
0 1/4 tsp  ground allspice
0 1/4 tsp  ground cinnamon
0.125 tsp  ground cayenne (red pepper)
1 pinch  fresh thyme
1 pinch  salt and pepper
Directions
  1. Wash and dry lamb.
  2. Using a food processor or blender, puree oil, shallots, garlic, thyme, lemon peel and juice, mustard, cumin, allspice, cinnamon, and cayenne until finely chopped. Coat lamb with mixture.
  3. Preheat grill.
  4. Lay lamb loin on grill and cook 25 to 30 minutes or until a meat thermometer reads at least 135 degrees F. Let lamb rest 5 to 10 minutes before slicing. Garnish with thyme sprigs and season with salt and pepper.
