1 1/2 tbsp  cumin seeds
1 1/2 tbsp  ground coriander
8 each  lean lamb loin chops
1 pinch  salt and pepper
1 tbsp  olive oil
  1. Combine cumin and coriander.
  2. Wash and dry lamb. Season lamb on both sides with salt and pepper. Rub spice mixture onto surface of lamb.
  3. Preheat oven to 325 degrees.
  4. Heat oil in an oven safe frying pan over medium high heat. Cook lamb chops, flipping one time 2 to 3 minutes per side or until browned.
  5. Move pan to oven and roast 7 to 8 minutes or until a meat thermometer reads at least 125 degrees.
