1 tbsp  chopped parsley
2 tbsp  fresh lemon juice
1 tbsp  capers
1 tsp  minced onion
0 1/2 tsp  dijon mustard
0.125 tsp  black pepper
4 oz  smoked salmon
24 pinch  Greens, Belgian endive, fresh
6 each  parsley sprigs
  1. Mix parsley with lemon juice, capers, onion, mustard, pepper, and salmon. Scoop 1 1/2 teaspoons of salmon mixture onto each endive leaf. Top with parsley.
