1 cup  cooking sherry
3 cup  low sodium chicken broth
3 tbsp  white all purpose flour
3 tbsp  Butter, unsalted
0 1/2 tsp  salt
0 1/4 tsp  black pepper
  1. In large saucepan, add sherry. Heat over high 5 minutes or until reduced to 1/2 cup.
  2. In large bowl, whisk broth and flour. Add to saucepan. Bring to boil, whisking continuously.
  3. Lower heat to medium, simmer 10 minutes, whisking often.
  4. Stir in butter, if using. Season with salt and pepper.
