2 tbsp  wasabi powder
1 cup  light mayonnaise
2 tbsp  fresh lemon juice
1 oz  fresh mint
1 pinch  salt
0 1/4 oz  fresh mint
1 1/2 lb  cooked shrimp
  1. Whisk together wasabi powder with 2 tablespoons water until smooth. Using a food processor or blender, puree mayonnaise, lemon juice, mint, and three-quarters of the wasbai mixture until smooth. Taste and mix in salt and more of the wasabi mixture depending on how spicy you like it. Spoon mixture into a bowl and use as a dipping sauce for shrimp. Garnish with a fresh mint sprig.
