Dipping Sauce
0 1/4 cup  low sodium soy sauce
1 each  scallions
1 tbsp  honey
2 tsp  fresh lemon juice
1 tsp  fresh ginger root

2 tsp  sesame oil
1 tbsp  fresh ginger root
2 1/2 cup  napa cabbage
1 each  small onions
0 1/4 lb  fresh mushrooms
1 each  medium carrots
2 tbsp  hoisin sauce
24 each  Wrappers, wonton, square
  1. To make the dipping sauce, whisk together all of the ingredients for the sauce in a small bowl and set aside.
  2. In a large nonstick pan or wok, heat the oil over medium high heat, add ginger and cook for 30 seconds. Stir in the cabbage, onion, and mushroom. Cook until tender, stirring often, about 4-5 minutes. Add in the carrots and cook another 4 minutes.
  3. Stir in the hoisin sauce, cook, stirring constantly, for 30 seconds. Remove from heat and let cool 10 minutes.
  4. Place 6 of the wonton skins onto your work surface and fill each with 1 1/2 teaspoons of the vegetable filling in the center.
  5. One at a time pleat up the edges of the wonton to enclose the filling, press to seal.
  6. Repeat with remaining wonton skins, working 6 at a time until you have made all 24.
  7. Spray a steamer basket with nonstick cooking spray and place half of the vegetable dumplings into the basket. Place over 1 inch of boiling water, cover and steam until thoroughly heated, about 5-6 minutes. Place on a serving platter and keep warm.
  8. Steam the remaining vegetable dumplings and serve immediately with the dipping sauce.
