1 lb  medium carrots
1 tbsp  extra virgin olive oil
1 each  medium garlic cloves
1 1/2 tsp  fresh lemon juice
0 1/2 tsp  ground cumin
0 1/2 tsp  salt
0 1/4 tsp  ground cinnamon
0 1/4 tsp  ground coriander
0 1/4 tsp  ground ginger
0.125 tsp  ground cayenne (red pepper)
1 tsp  paprika
2 each  large whole wheat pitas
  1. Bring pot of water to boil and add carrots. Cook until tender, about 20-22 minutes; drain and let cool for 5 minutes.
  2. Put carrots in blender with the oil, garlic, lemon juice, cumin, salt, cinnamon, coriander, ginger, and cayenne. Process until smooth.
  3. Place in serving dish and sprinkle with paprika. Serve warm or at room temperature with pita wedges.
