  1. Mix lentils, radicchio, tomatoes, cucumber, and peppers. Drizzle mixture with dressing and gently toss. Sprinkle with salt and pepper.
  2. To make sprouted lentils, soak lentils overnight. Strain.
  3. Place lentils in a jar and cover with cheesecloth. Let rest at room temperature for 2 days; wash lentils and strain 3 to 4 times a day until lentils have sprouted.
  4. Chill sprouts until ready to sue. Be sure to check daily, if they are dry, rinse and drain.
