1 each  cooking spray
4 tsp  pumpkin seeds
1 tbsp  canola oil
2 each  Squash, chayote, fresh, 5 3/4"
0 1/2 cup  fresh chopped onion
2 each  medium garlic cloves
1 pinch  salt
1 pinch  black pepper
  1. Coat small skillet with cooking spray over medium heat.
  2. Toast pumpkin seeds over medium heat 3-5 minutes until they begin to pop. Remove from heat and set aside.
  3. Wearing protective gloves, peel, core, and dice chayote into 1/2" cubes.
  4. In large skillet heat oil over medium. Add chayoter, cover, and cook 15 minutes, stirring frequently.
  5. Add onion to skillet, mix well, and cook additional 3 minutes, stirring frequently.
  6. Add garlic to skillet and cook additional 2 minutes. Sprinkle with salt and pepper.
  7. Transfer vegetables to serving bowl and top with pumpkin seeds.
