1 each  cooking spray
4 tsp  pumpkin seeds
0 1/2 cup  fresh chopped onion
2 each  medium garlic cloves
2 each  Squash, chayote, fresh, 5 3/4"
1 pinch  salt
1 pinch  black pepper
  1. Heat a cooking spray coated frying pan over medium heat.
  2. Toast pumpkin seeds over medium heat 3 to 5 minutes or until the begin to pop. Set aside.
  3. Heat a cooking spray coated frying pan over medium heat and cook onion and garlic 3 to 5 minutes.
  4. Mix in squash and cook 20 minutes, stir often while cooking. Sprinkle with salt and pepper.
  5. Pour squash into a serving bowl and top with pumpkin seeds.
