1 lb  fresh spinach leaves
1 each  cooking spray
0 1/4 cup  minced onion
2 tsp  margarine
2 tbsp  white all purpose flour
1 cup  whole milk
0 1/4 cup  sour cream
1 pinch  ground nutmeg
1 pinch  salt
1 pinch  black pepper
Directions
  1. Lightly coat large pot with cooking spray.
  2. Wash spinach under cool running water, but do not pat dry.
  3. Place spinach in pot, cover and cook over medium 3 - 4 minutes, or until spinach begins to wilt.
  4. Strain and discard extra liquid. Move spinach to serving dish.
  5. In separate small pot, melt margarine. Add onion, cook 3-5 minutes.
  6. Whisk in flour and cook over medium low 1 minute, whisking continually.
  7. Whisk in milk, increase heat to medium, and bring to boil. Continue boiling, whisking continually 1 minute or until mixture is thick.
  8. Remove from heat, whisk in sour cream.
  9. Spoon sauce over spinach and sprinkle with nutmeg, salt, and pepper.
