1 lb  fresh spinach leaves
1 each  cooking spray
0 1/4 cup  minced onion
2 tsp  unsalted butter
2 tbsp  white all purpose flour
1 cup  Milk, 2%, with add vitamin A & D
0 1/4 cup  fat free sour cream
1 pinch  ground nutmeg
1 pinch  salt
1 pinch  black pepper
  1. Wash spinach under cool running water. Do not pat dry.
  2. Lightly coat large pot with cooking spray and heat over medium.
  3. Place spinach in pot, cover and cook over medium 6-8 minutes, or until spinach begins to wilt. Stir occasionally.
  4. Strain and discard extra liquid. Move spinach to serving dish.
  5. In separate small pot, melt butter over medium heat. Add onion, cook 3-5 minutes.
  6. Reduce heat to medium-low. Whisk in flour and cook 30 seconds, whisking continually.
  7. Whisk in milk and continue whisking 3-4 minutes until mixture is thick.
  8. Remove from heat, whisk in sour cream.
  9. Spoon sauce over spinach and sprinkle with nutmeg, salt, and pepper. Mix well and serve.
