1 each  olive oil cooking spray
2 cup  fresh chopped onion
1 cup  chopped green bell peppers
1 cup  red bell peppers, sliced
6 each  medium garlic cloves
0 1/4 cup  cold water
1 pinch  salt
1 tsp  black pepper
  1. Heat a cooking spray coated frying pan over medium heat.
  2. Sauté onions, bell peppers, and garlic 5 minutes.
  3. Pour water into pan, place lid on, and simmer over medium-low heat 20 to 25 minutes or until vegetables are soft; stirring often.
  4. Sprinkle with salt and pepper.
