1 each  cooking spray
2 lb  Onion, sweet, fresh
1 each  fresh leeks
4 oz  medium shallots
0 1/2 cup  fresh chopped green onion
0 1/2 cup  low sodium vegetable broth
1 1/2 tsp  spearmint, dried
0 1/4 tsp  ground sage
1 pinch  salt
1 pinch  white pepper
  1. Heat a frying pan coated with cooking spray over medium heat. Cook onions, leek, shallots, and green onions 3 to 4 minutes, stirring often. Pour in broth and bring to a boil. Lower heat, place lid on pan, and simmer 5 minutes.
  2. Mix in mint and sage and cook over medium-low heat 15 minutes. Sprinkle with salt and pepper.
