1 each  butter flavored cooking spray
12 oz  fresh shiitake mushrooms
0 1/4 cup  fresh chopped onion
1 tsp  minced garlic
0 1/4 cup  white wine
0 1/4 tsp  ground thyme
0 1/2 cup  fat free sour cream
1 pinch  salt
1 pinch  ground cayenne (red pepper)
  1. Heat a cooking spray coated frying pan over medium heat. Chop mushrooms, cutting off rough stems. Sauté mushrooms, onion, and garlic 3 to 4 minutes.
  2. Mix wine and thyme into to pan and bring to a boil. Lower heat, place lid on pan, and simmer 8 to 10 minutes. Continue cooking over low heat 20 to 25 minutes until mushrooms are dry and golden. Mix in sour cream, salt, and pepper.
