0 3/4 cup  fat free unsalted beef broth
2 each  sweet potatoes
0 1/2 lb  fresh mushroom slices
0 1/4 cup  shallots, chopped
2 each  medium garlic cloves
1 1/2 tbsp  dijon mustard
1 1/2 tbsp  fresh thyme
0 1/2 tsp  black pepper
1 lb  Beef, top sirloin steak, lean, raw
0 1/4 tsp  salt
Directions
  1. Add the broth and sweet potatoes to a large deep dish frying pan and bring to a simmer over medium heat. Cover and cook 8 minutes.
  2. Add in the mushrooms, shallots, garlic, mustard, thyme, and 1/4 teaspoon of pepper.
  3. Cook, uncovered, until vegetables are tender and sauce is reduced slightly, about 5 minutes.
  4. Remove from heat and keep warm.
  5. Place a large nonstick pan over medium high heat until hot and add in the steak.
  6. Season with salt and remaining pepper; cook until browned, about 4 minutes per side, turning only once. Check in the center for desired doneness.
  7. Place on a cutting board and slice steak across the grain into thin slices.
  8. Serve with sweet potatoes.
