1 1/2 lb  fresh spinach leaves
0 1/4 cup  Wine, sake/saki, Japanese
2 tbsp  low sodium soy sauce
2 tsp  sugar
2 tsp  sesame oil
2 tbsp  toasted sesame seeds
Directions
  1. Boil a pot of water. Cook half the spinach 1 to 2 minutes or until wilted. Using a slotted spoon, take out the spinach and soak in a large ice-bath. Cook other half and soak in ice bath.
  2. Whisk together sake, soy sauce, sugar, and sesame oil.
  3. Squeeze spinach to remove all water. Toss spinach with dressing in a serving bowl. Wrap with plastic wrap and chill 4 hours. When ready to serve, top salad with sesame seeds.
