1 each  Cucumber, with skin, fresh, 8 1/4" long
0 1/4 tsp  kosher salt
1 each  medium red bell peppers
2 tbsp  rice vinegar
2 tsp  fresh ginger root
2 tsp  sesame oil
0 1/4 tsp  hot red pepper flakes
0 1/4 tsp  black pepper
  1. Toss cucumbers with salt and drain in strainer for at least 20 minutes.
  2. In separate bowl, mix cucumbers with bell peppers.
  3. In small bowl, whisk vinegar, ginger, oil.
  4. Drizzle dressing over cucumber mixture and sprinkle with red and black pepper.
