3 piece  raw bacon slices
1 1/2 tbsp  white all purpose flour
2 tbsp  distilled white vinegar
3 tbsp  sugar
1 tsp  black pepper
0.125 tsp  salt
0 1/2 cup  Greens, collard, chopped, fresh
  1. Cook the bacon in a large skillet until crisp. Remove the bacon, but leave the bacon grease in the skillet. Cover the bacon and set aside. Whisk the flour into the bacon grease over medium heat; the mixture will be very dry.
  2. Combine the vinegar, 1/3 cup water, sugar, pepper, and salt; whisk into the flour mixture. The mixture will thicken slightly. Reduce heat to low.
  3. Add the greens, one handful at a time, stirring well to coat after each addition. Cover and allow to steam for about 10 minutes, stirring frequently. The greens will give up liquid to aid in steaming.
  4. Transfer to a serving dish and garnish with the bacon.
