1 each  large onion
2 each  chopped green bell peppers
6 each  medium garlic cloves
2 tbsp  extra virgin olive oil
2 lb  whole lean beef brisket
15 oz  no-salt tomato sauce
1 cup  red wine
2 each  bay leaf
1 tbsp  paprika
2 tsp  fresh oregano
1 tsp  ground cayenne (red pepper)
1 tsp  ground cumin
1 tsp  salt
4 cup  Rice, brown, medium grain, cooked
1 pinch  pimentos
  1. Saute the onion, bell peppers, and garlic in oil in a large heavy pot over medium-low heat until soft, about 3 to 5 minutes. Add the meat, increase heat to medium-high; brown each side about 4 minutes.
  2. Reduce heat. Add the tomato sauce, wine, bay leaves, and spices. Cover and simmer gently for 1 hour. Remove from heat.
  3. Shred the beef with two forks. Return the meat to the sauce. Simmer, uncovered, 20 to 30 minutes, or until the sauce has thickened. Serve over rice and garnish with pimentos if desired.
