1 each  olive oil cooking spray
1 each  whole eggplant
1 cup  fresh chopped onion
0 1/2 cup  chopped red bell peppers
6 each  medium garlic cloves
1 tsp  oregano leaves
0 1/2 tsp  ground thyme
0 1/4 tsp  hot red pepper flakes
0 1/2 cup  low sodium vegetable broth
1 pinch  salt
1 pinch  black pepper
2 tbsp  chopped parsley
  1. Heat a cooking spray coated frying pan over medium heat. Cook eggplant, onions, bell pepper, and garlic 8 to 10 minutes.
  2. Mix in oregano, thyme, and red pepper and cook 1 to 2 minutes.
  3. Pour broth into pan and bring to a boil. Lower heat, place lid on pan, and simmer 15 to 20 minutes or until liquid is evaporated. Sprinkle with salt, pepper, and parsley.
