4 quart  cold water
6 lb  Greens, collard, chopped, fresh
2 tbsp  vegetable oil
2 cup  minced onion
4 each  medium garlic cloves
1 tsp  salt
  1. In large stock pot, boil 4 quarts of water.
  2. Place half collard greens in pot. Cook 4 minutes.
  3. With slotted spoon, remove greens and place on paper towels to drain.
  4. Cook remaining greens following steps 2 & 3.
  5. In large pot, heat oil over medium.
  6. Add onion and garlic, cook 3 minutes.
  7. Mix in collard greens and salt. Cook 3 minutes. Serve.
