2 lb  Celery Root, fresh
1 each  potatoes, fresh, medium
0 1/2 cup  Onion, vidalia, fresh, chopped
2 tbsp  butter
0 1/2 cup  half & half
1 pinch  ground nutmeg
1 pinch  salt
1 pinch  white pepper
1 pinch  chopped parsley
Directions
  1. Boil a pot of water. Cook celery root, potato, and onion 15 minutes or until soft. Strain well.
  2. Using a food processor or blender, puree vegetables until smooth.
  3. Pour mixture into a frying pan. Cook mixture over medium to medium low heat 15 minutes, stirring often, be sure not to brown mixture.
  4. Add margarine and half and half into mixture until very creamy.
  5. Mix in nutmeg, salt, and pepper. Top with parsley when ready to serve.
