1 each  Cauliflower, head, large, 6" - 7", fresh
1 pinch  paprika
1 pinch  chopped parsley

Cheddar Sauce
2 tbsp  minced onion
1 tbsp  margarine
2 tbsp  white all purpose flour
1 cup  fat free milk
0 1/2 cup  low fat cheddar cheese, shredded
0 1/4 tsp  dry mustard
2 pinch  hot pepper sauce
1 pinch  salt
1 pinch  white pepper
  1. Cook onion in melted margarine 2 to 3 minutes.
  2. Mix in flour and cook medium low heat, stirring continually for 1 minute.
  3. Mix in milk and bring to a boil, whisking continually 1 minute or until thick.
  4. Lower heat to low. Mix in cheese, mustard, and pepper, whisking until cheese is melted. Sprinkle with salt and pepper.
  5. Pour cheese sauce onto steamed cauliflower, top with parsley and serve.
