10 oz  fresh baby spinach
10 oz  salad greens
1 cup  fresh green beans
1 cup  Beans, yellow, mature
3 each  scallions
2 tbsp  olive oil
1 tbsp  fat free mayonnaise
2 tsp  fresh lemon juice
1 tbsp  cold water
1 each  medium garlic cloves
1 pinch  salt and pepper
Directions
  1. Combine spinach, greens, green beans, and scallions in a salad bowl.
  2. In a separate bowl, whisk the olive oil, mayonnaise, lemon juice, garlic, salt, and pepper to blend.
  3. At this point, start adding water slowly to slightly lighten the consistency -- do not add too much.
  4. Just before serving, pour dressing over salad and toss gently to coat.
