1 oz  Cheese, mozzarella, 1" cube
4 each  fresh basil leaves
1 each  fresh plum tomatoes
0 1/2 tsp  salt
4 each  boneless skinless chicken breasts
3 tbsp  white all purpose flour
0 1/4 tsp  paprika
0 1/4 tsp  black pepper
1 tbsp  olive oil
  1. In small bowl, mix cheese, basil, tomatoes, and 1/4 teaspoon of salt.
  2. Slice chicken breasts horizontally making large pocket.
  3. Evenly divide tomato mixture into 4 servings and stuff into chicken pocket. Secure closed with toothpick.
  4. In shallow plate, gently mix flour, paprika, pepper, and remaining 1/4 teaspoon of salt. Dredge each chicken breast, coating well.
  5. In large skillet, heat oil medium. Cook chicken 4-5 minutes per side, until no longer pink. Serve immediately.
