14 1/2 floz  low sodium vegetable broth
0 1/2 tsp  ground turmeric
1 cup  long grain white rice
0 1/4 cup  Salsa
1 each  medium tomatoes
1 pinch  salt
1 pinch  black pepper
1 tbsp  fresh cilantro
  1. Combine broth and turmeric in a pot, and bring to boil.
  2. Mix in rice and salsa. Cover and reduce heat, simmering for 20 to 25 minutes, or until liquid is absorbed.
  3. Mix in tomatoes during the last 5 minutes of cooking. Sprinkle with salt and pepper. When ready to serve, top with cilantro.
