1 each  cooking spray
0 1/2 cup  fresh chopped green onion
1 cup  Rice, long grain, FastCook, dry
1 floz  grated orange peel
2 1/2 cup  cold water
2 tbsp  fresh cilantro
1 pinch  salt
1 pinch  black pepper
  1. Heat a cooking spray coated pot over medium heat.
  2. Cook onion 3 to 5 minutes or until soft.
  3. Stir in rice and orange zest and cook 2 to 3 minutes or until rice is golden, stir often while cooking
  4. Pour water into pot and bring to a boil.
  5. Lower heat, place lid on pot, and simmer 20 to 25 minutes or until rice is soft and the liquid is absorbed.
  6. Sprinkle with cilantro, salt, and pepper.
