0 3/4 cup  wheat, bulgur, dry
1 1/2 cup  chopped tomato
0 3/4 cup  fresh chopped green onion
0 3/4 cup  chopped parsley
0 1/4 cup  fresh mint
0.6667 cup  plain nonfat yogurt
0.3333 cup  fresh lemon juice
2 tbsp  olive oil
1 pinch  salt
1 pinch  black pepper
Directions
  1. Soak bulgur in boiling water 15 minutes or until soft. Strain well.
  2. Combine bulgur, tomatoes, green onions, parsley, and mint. Mix in yogurt, lemon juice, and oil.
  3. Sprinkle with salt and pepper.
  4. Chill, covered for 1 to 2 hours.
