1 each  frozen 9" pie crust
1 each  cooking spray
0 1/4 cup  fresh chopped onion
0 3/4 cup  fat free milk
6 oz  evaporated milk
1 each  eggs
2 each  egg whites
0 1/4 cup  fat free sour cream
0 1/4 tsp  salt
0.125 tsp  ground cayenne (red pepper)
0.125 tsp  ground nutmeg
1 cup  low fat shredded swiss cheese
1 tbsp  white all purpose flour
2 each  bacon bits
  1. Preheat oven to 350 degrees F.
  2. Heat a cooking spray coated frying pan over medium heat. Cook onion 3 to 5 minutes or until translucent.
  3. Whisk together skim and evaporated milk, egg, egg whites, sour cream, salt, cayenne, and nutmeg. Combine cheese with four and whisk into mixture with bacon bits and onion. Spoon mixture into pie crust.
  4. Bake 40 minutes or until pie is set. Cover edges of pie crust with foil if it gets to brown. Let quiche cool 5 minutes before slicing.
