0 1/2 cup  olive oil
2 each  medium garlic cloves
2 pinch  fresh sage
1 each  bay leaves
  1. Add oil, garlic, sage, and bay leaf to a pot and cook over medium low heat until a thermometer reads 180 degrees F.
  2. Reduce heat to low and cook 20 minutes, not letting the temperature go above 200 degrees F.
  3. Let cool to room temperature and strain mixture through a fine chinois set over a bowl, saving liquid and throwing away solids.
