4 each  Cucumber, fresh, medium
6 each  scallions
0 1/4 cup  peanuts
1 cup  chopped parsley
1 cup  fresh cilantro
1 each  whole jalapeno pepper
0 1/4 cup  rice vinegar
1 tbsp  canola oil
1 1/2 tsp  curry powder
1 tsp  sugar
1 each  medium garlic cloves
1 pinch  salt and pepper
  1. Mix the first 3 ingredients in a large bowl.
  2. Place the parsley, cilantro, and jalapeno pepper to a blender and process until finely chopped. Add to the cucumber mixture and mix well.
  3. In a small bowl, whisk together the remaining ingredients and pour over cucumber mixture, toss well and serve.
