1 each  small tomato
0 1/2 oz  Cheese, pepper jack
0 1/4 tsp  sliced almonds
1 pinch  chopped parsley
  1. Preheat oven to 350 degrees F.
  2. Remove a 1/4-inch slice from top side of tomatoes. Remove pulp and place upside down on paper towels to drain.
  3. Form cheese into a sort of ball and fill tomato. There should be a slight mound above the tomato. Sprinkle with almonds and parsley.
  4. Bake 5 minutes to melt cheese. Don't overcook or the tomatoes will be too soft.
