1 each  fresh mango
4 tsp  Chili Peppers, serrano, fresh, chopped
2 tbsp  canola oil
1 tbsp  fresh ginger root
2 tsp  minced garlic
0 1/2 cup  rice vinegar
0 1/2 cup  Preserves, pineapple
1 cup  salt
1 lb  small scallops
2 each  Oranges, fresh, medium, FDA
2 each  chopped green bell peppers
Directions
  1. Preheat oven to 350 degrees F.
  2. Combine the mango, pepper, oil, ginger, garlic, vinegar, pineapple, and salt in a blender or food processor; process until smooth. Reserve 1/2 cup of the sauce to brush on kabobs just before serving.
  3. Thread 2 green pepper squares, 2 orange pieces, and 1 scallop on each skewer. Brush the kabobs with the sauce and bake until done, about 15 minutes. Baste with the reserved sauce just before serving.
