Ingredients Directions
  1. Preheat oven to 400 degrees. Coat a 13 X 9 inch pan with the cooking spray.
  2. Place the chicken and broth in a medium size skillet, bring to a boil. Cover, reduce heat, and simmer for about 10 to 15 minutes.
  3. Place the coconut in the prepared pan, toast 7 to 10 minutes, stirring occasionally.
  4. Combine the mayonnaise, lime juice, lime zest, chipotle pepper, and cumin in a large bowl.
  5. Cut the chicken into 1/2 inch cubes and add to the mayonnaise mixture, stir gently to coat.
  6. Transfer the mayonnaise coated cubes to the coconut pan. Toss gently.
  7. Refrigerate or serve immediately.
