3 lb  fresh plum tomatoes
3 each  medium garlic cloves
0 1/2 tsp  hot red pepper flakes
8 oz  pitted calamata olives
0 1/4 cup  fresh basil
1 tbsp  balsamic vinegar
0 1/2 tsp  kosher salt
  1. Preheat oven to 425 degrees F.
  2. Slice tomatoes in half, lengthwise and lay, skin side up in a baking dish. Scatter garlic and red pepper overtop of tomatoes. Bake 40 minutes or until garlic is tender and tomato skins begin to become brown.
  3. Take pan out of oven. Take off and throw away tomato skins. Mash the garlic and tomatoes using a fork. Mash in the olives, basil, vinegar, and salt.
