1 each  cooking spray
3 each  medium bananas
0 1/4 cup  sugar
6 piece  sliced whole wheat bread
2 cup  flaked sweetened coconut
1 tbsp  vanilla extract
1 cup  liquid egg substitute
13 1/2 floz  fresh coconut milk
  1. Preheat oven to 350 degrees. Spray a 9 inch square baking dish with the cooking spray.
  2. Slice the bananas into the pan, sprinkle with sugar, and toss.
  3. Add the bread and coconut and toss.
  4. In a medium size bowl combine the vanilla, egg substitute, and coconut milk , pour over the bread mixture.
  5. Stir well pressing down with a spatuala.
  6. Bake for 60 minutes, or until the center is set.
