1 cup  sugar
0 1/4 cup  white all purpose flour
3 tbsp  Cocoa Powder, unsweetened
1 pinch  salt
2 cup  lowfat milk
3 each  raw egg yolks
1 each  frozen 9" pie crust
3 each  egg whites
0 1/4 tsp  cream of tartar
  1. Preheat oven to 275 degrees F.
  2. Combine 3/4 cup of the sugar, flour, cocoa, and salt in a large heavy saucepan.
  3. Gradually whisk in the milk. Bring to a boil over a medium-high heat, stirring constantly, until the mixture becomes slightly thick and bubbly.
  4. Gradually add 1/3 cup of the hot milk mixture to the beaten egg yolks and stir well.
  5. Return the egg mixture to the pan. Cook 2 minutes or until the mixture becomes very thick, stirring constantly.
  6. Pour the filling into the prebaked pie shell.
  7. Using clean, dry beaters, beat the egg whites and the cream of tartar in an electric mixer at high speed until foamy.
  8. Add remaining sugar, 1 tablespoon at a time, beating until stiff peaks form.
  9. Spread evenly over the filling, sealing to the edge of the crust. Bake for 20 minutes or until the meringue is lightly browned.
