3 tbsp  fresh lemon juice
1 tbsp  extra virgin olive oil
1 tsp  sea salt
1 tsp  ground cumin
1 tsp  coriander seeds
0 1/2 tsp  cumin seeds
0 1/2 tsp  hot red pepper flakes
30 each  fresh cauliflower florets
1 each  large yellow bell pepppers
1 each  large red bell peppers
0 1/2 cup  fresh cilantro
Directions
  1. Preheat oven to 450°F.
  2. In large bowl, whisk lemon juice, oil, salt, cumin, coriander, cumin, and red pepper. Add cauliflower and bell peppers. Toss to coat well.
  3. Arrange vegetables in one layer on baking sheet. Roast 15 minutes, remove from oven. Toss. Return to oven for additional 10 minutes.
  4. Remove from oven, allow to cool. Add cilantro and toss to mix well..
  5. Thread 1 cauliflower floret and 1 bell pepper piece on each of 30 skewers.
