  1. In a medium-size mixing bowl, combine the turkey, apple, celery, raisins, and almonds.
  2. In a small mixing bowl, whisk together the remaining salad ingredients. Gently fold them into the turkey mixture until well combined.
  3. Spoon the salad into the four pita pockets.
