4 each  salmon fillet
0 1/4 tsp  salt
0 1/4 tsp  black pepper
1 1/2 cup  chopped tomato
2 tsp  low sodium soy sauce
2 1/2 tsp  fresh tarragon
2 tsp  dijon mustard
1 pinch  fresh tarragon
  1. Preheat oven to 425 degrees F.
  2. Season fish with salt and pepper. Arrange fish, meat side down in a frying pan. Add tomatoes to pan and top with soy sauce. Cover handle of pan with aluminum foil and roast 12 minutes or until fish is flaky. Take skin off of fish and throw away. Take fish out of pan and set aside in a warm place.
  3. Combine the tarragon and mustard with the tomatoes. Spoon sauce over fish and top with tarragon sprigs.
