5 lb  whole leg of lamb
3 tbsp  white wine
2 tbsp  chopped parsley
2 oz  fresh mint
2 tbsp  olive oil
1 tbsp  minced garlic
1 tsp  paprika
0 1/2 oz  bay leaf
1 tsp  black pepper
1 pinch  salt
Directions
  1. Preheat oven to 375 degrees F.
  2. Wash and dry lamb and cut off any extra fat.
  3. Combine wine, parsley, mint, oil, garlic, paprika, bay leaves, and pepper. Massage mixture over entire leg of lamb.
  4. Move lamb to a roasting pan and bake 1 1/2 hours or until a meat thermometer reads at least 140 degrees. If pan drippings begin to burn, pour water in 1/4 cup at a time.
  5. Let lamb rest 10 to 15 minutes before slicing. Season with salt and pepper.
