1 1/2 each  fresh tomatoes
0 3/4 cup  chopped parsley
2 oz  pitted calamata olives
1 tbsp  white wine vinegar
0 1/4 tsp  ground tarragon
0 1/4 tsp  salt
2 each  medium garlic cloves
1 1/2 lb  tuna fillets
0 1/2 oz  herbes de provence
0 1/4 tsp  salt
1 each  cooking spray
1 pinch  fresh chives
  1. Mix together tomato, parsley, olive, vinegar, tarragon, salt, and garlic in a bowl. Wrap with plastic wrap and place in refrigerator for 20 minutes.
  2. Season tuna with herbes de Provence and salt. Arrange tuna on a cooking spray coated grill and cook 3 minutes per side of until preferred degree of doneness. Serve tomato mixture on the side and top fish with chives.
