20 each  large raw shrimp
1 tbsp  fresh basil
1 tsp  extra virgin olive oil
0 1/2 tsp  grated lemon rind
0 1/4 tsp  kosher salt
0 1/4 tsp  hot red pepper flakes
0.125 tsp  black pepper
4 oz  prosciutto
1 each  Cooking Spray, canola water base, 1/3 sec spray
1 each  medium lemons
  1. Preheat broiler.
  2. Toss shrimp, basil, oil, lemon zest, salt, red pepper, and black pepper in a bowl and set aside.
  3. Arrange prosciutto slices on a large workspace. Slice in half so there are 20 pieces.
  4. Wrap one slice of prosciutto around each shrimp, letting tail hang out. Thread five shrimp on each of four skewers.
  5. Lay skewers on a cooking spray coated baking sheet and broil 2 minutes per side. Garnish with lemon wedges.
